Prosecco, With this Italian Champagne Big Bubbles Add Charm
Prosecco is a beautiful type of sparkling wine. This Italian champagne (not really Champagne because only sparkling wine from that region can carry the name of Champagne) has much larger bubbles than Champagne. This is because of the way the bubbles are formed, using the Charmat method.
The Charmat Method involves secondary fermentation in tanks versus the bottle, leading to larger bubbles. Like you find in Cava, a spanish sparkling wine. These types of Italian wine are named for the grapes which make them.
My favorite use for this sparkler is in bellinis. Bellinis are the Italian equivalent of a mimosa and go great with brunch.
Don't know how to make a bellini? Here you go:
-Freshly pureed peaches or peach juice (I prefer peach juice because it is sweeter.) -Chilled dry Prosecco, type doesn't matter to me. Cheap is ok, the peach is what will come through. -Pour 1/2-2/3 glass of your sparkler -Fill rest of the glass with peach juice or puree -Chink-Chink-Cheers!
This is a beverage enjoyed cold and is a good start to a lazy day. Sundays are best in my opinion. After a good Saturday of wine tasting. Enjoy!
